Method

Step 1

Preheat your oven to 180C/Gas Mark 4. Grease and line a 23cm round cake tin. In a bowl, mix together the flour, baking powder, butter, and caster sugar until combined. Gradually add the eggs, beating well between each addition.

Fold in the blueberries and lemon extract, then spoon the mixture into the prepared tin. Sprinkle over the flaked almonds. Bake for 40-45 minutes, or until a skewer inserted comes out clean. Leave to cool for 5-10 minutes before transferring to a wire rack to cool completely.
