For the cake

– 250g self-raising flour

– 280g icing sugar

– 2 tsp lemon juice


Step 1

Preheat your oven to 180C/Gas Mark 4. Grease and line a 23cm round cake tin. In a bowl, mix together the flour, baking powder, butter, and caster sugar until combined. Gradually add the eggs, beating well between each addition.

Step 2

Fold in the blueberries and lemon extract, then spoon the mixture into the prepared tin. Sprinkle over the flaked almonds. Bake for 40-45 minutes, or until a skewer inserted comes out clean. Leave to cool for 5-10 minutes before transferring to a wire rack to cool completely.

Step 3

To make the topping, beat together the butter, icing sugar and lemon juice until light and fluffy. Spread over the cooled cake and sprinkle with a few more flaked almonds. Serve with fresh blueberries.
